I used to live off wine gums in the library when I was studying!

I had to look up wine gums! no booze in them though :(

Last semester at finals time, there was a kid in there reading a book with his feet up and a couple tall boys.

Sadly no actual vino in them, just soft chewy sweets that make no noise! That said, best advert ever...

I went to law school in NOLA. I had Evidence at 6pm. NOT COOL! I was definitely known to have one of those to-go daiquiris NOLA is known for with me in said class quite often.

Ugh, talking about it is giving me big flashbacks - horrible professor.

Because I did my law degree part time in the evenings it was 6-9 mon-thurs after work and 9-1 every second Saturday. Why I never thought to bring a pint of Guinness in with me...

I've got a big ole thing of kimchi in the fridge but i'm not too big on eating it all by itself and i'm never inspired to put it with anything. What's quick, easy, and awesome (that doesn't involve godforsaken spam)?

You can do kimchi fried rice without Spam, although pan-fried Spam is great and authentically Korean. :)

If you'll trust me on this one:

ingredients:
*steamed jasmine rice
*two scallions, sliced
*two eggs, beaten and seasoned with salt and pepper
*two quarter inch slices of Spam (roughly 1/4 of a tin)
*1 cup of kimchi, roughly chopped
*1 Tbsp unsalted butter
*white sugar
*1/2 chinese sausage, chopped, optional

in a pan over medium heat, melt butter and cook until brown. add the kimchi, and sprinkle with a pinch of white sugar. saute until the kimchi is browned and caramelized, tasting and adding more sugar if desired to counteract the sourness of the kimchi. remove to a plate and keep warm.

wipe out the pan, then increase heat to medium high. add the Spam slices and fry until crispy and browned on both sides. remove to the same warm plate as the caramelized kimchi.

return heat to medium, then add the chinese sausage, if using, and saute until fat is rendered and sausage is translucent. if not using chinese sausage, add another 1/2 Tbsp butter or neutral oil and heat. add beaten eggs and cook, stirring gently, until scrambled to your liking. fold in scallions, then remove to plate.

serve alongside steamed rice with a cup of hot black coffee.
 
What's this black coffee about? I'm not opposed to it, just curious why it is THE drink you chose to pair with it. Is this a traditional pairing?

It's a breakfast dish with a lot of strong flavors: salty, sweet, savory, spicy, fatty. I find black coffee helps to cut through and reset the palate a little.
 
For the record, the above was an approximation of a wonderful breakfast dish from Maple Ave Restaurant in Vienna, VA. The chef was kind enough to share his caramelized kimchi preparation with me.

It's from memory, though, so if there are any issues with balance, the blame lies with me.
