What @chrb98 said, but I would also recommend “Stop Making Sense”. A live album that also kind of serves as a “best-of”, at least of their material to that point. And some of those versions are better than the studio versions.

My favorite is “More Songs About Buildings and Food”. Some excellent mixing going on that record. Plus has the best conclusion to a Talking Heads album.

IMO start from the beginning and listen to all their albums (you can skip True Stories). Not many bands evolved so dramatically. If you’re only gonna listen to one album... watch the movie Stop Making Sense.
