@Tys1 Love it! I assume most of the tricks you learn are portable from one oven to another. What in particular is intimidating you about the Bertello?

I run mine on propane, so if your questions are regarding wood-firing, I am not your guy.

I run my Ooni with wood, but will pick up the propane attachment for next summer
